Natalie's Smooth Yellow Split-Pea SoupIngredients:

One half white or yellow onion, chopped
2 carrots, chopped
1 stalk celery, chopped
1 large potato or a handful small new or baby potatoes, any variety white or yellow, chunked
4 cups dried split yellow peas
2 quarts chicken or vegetable broth
1 teaspoon salt
1/4 teaspoon garam masala
1 package or 1/4-1/2 pound cooked + chopped ham, pancetta, prociutto, bacon or smoked turkey (optional).

*Need a little extra veggies in your kids? Customize this soup by adding chopped zuchinni or a small stash of greens to the crock pot. Or, try it with half the peas substituted for red or orange lentils.

Cooking Instructions

Place onion, carrots, celery, potato, peas, broth and seasonings into slow cooker. Add water if needed to cover ingredients and fill up slow cooker to a couple inches below rim.

Cook on high 4-6 hours

Immerse hand blender into soup and blend until creamy and smooth. Toss in cooked meat. Salt and pepper to taste. Serve with warm crusty bread and a swirl of olive oil on top.
