Quesadillas for Everyone

Quesadillas
Makes 4 servings
1/2 cup vegetarian refried beans
1/4 cup filling as desired from the list below
1 cup shredded cheese such as cheddar or Monterey Jack
2 teaspoons butter
4 flour tortillas
Pico De Gallo for garnish
Filling suggestions include:
Chopped green onions
Chopped fresh tomatoes
Chopped olives
Chopped red bell pepper
Finely chopped jalapeño pepper
Corn kernels
Spread beans over half of a fresh tortilla. Sprinkle other fillings as desired on top, then cover with a bit of cheese. Fold in and press edges together to keep the fillings from falling out.
Lightly butter a hot skillet or griddle and heat the quesadilla through, turning once, until the cheese is melted and the fillings are hot, about 5 to 7 minutes total.
Allow to cool for a few minutes, then cut into wedges.
