Healthy Kids Cook: Road Trip! Veggie Yogurt Dippers

ParentMap and PCC Natural Markets have partnered to produce an exciting web series called Healthy Kids Cook, designed to encourage families to make a healthy habit of cooking fresh food together in the kitchen, and to help explore the farm-to-table journey of some of your favorite foods. 

In this episode, PCC Chef Jackie Freeman takes us on a field trip to beloved Ellenos Real Greek Yogurt at Pike Place Market. Then she and her young assistants head into the TasteMobile's kitchen to prepare a fast and delicious snack that will have kids gobbling down an array of fresh vegetables and protein-packed Greek yogurt.

Packed in tiny canning jars, these easy, healthy and super-yummy snacks are easy to take on the go.

Serves 4

  • 3/4 cup plain Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chopped fresh chives
  • Salt and pepper, to taste
  • 6 tablespoons shredded carrots
  • 6 tablespoons diced cucumbers
  • Celery sticks, pita wedges, or crackers, for dipping (optional)

Preparation

Combine yogurt, garlic powder, dill, onion powder, chives, salt and pepper in a small bowl.

In a small ramekin, alternate layers of 1 tablespoon yogurt mixture, 1 ½ tablespoons carrots, 1 tablespoon yogurt mixture, 1 ½ tablespoons cucumbers and top with 1 tablespoon yogurt mixture. Serve with celery sticks, pita wedges or crackers for dipping.
