People ask me for this coffee cake recipe all of the time - almost embarassed at how easy it is. It's perfect when company is coming and you need to whip something up super FAST. My kids devour it. Especially my daughter Dorothy.
Dorothy's Favorite Coffee Cake
1 box yellow cake mix
1 small box vanilla pudding mix
3 eggs
3/4 cup canola oil
1 cup sour cream (or sometimes I use vanilla yogurt)
1/2 cup warm water
1 large container of fresh or frozen blueberries (at least 1 1/2 cups)
Mix all together in mixer until creamy. Pour into a buttered and floured bundt pan. Cook 50 minutes at 350 degrees. Let cool for 10 minutes. Invert and pop out cake out on to cooling rack. Serve warm. You can substitute walnuts, pecans or chocolate chips instead of berries as yummy variations. Anything mixed in with this moist cake works. Enjoy!
