They’re in the action, grinding wheat into flour, rolling out the dough, and racing the clock to get it baked—just like our ancestors did when they bolted out of Egypt. 18 minutes. That’s all they get. Will their matzah be thin, crispy, and perfectly round? Or will it be an uneven, slightly burnt work of art?
