Nestled in the foothills of the Cascades outside Issaquah, River Valley Cheese offers cheese-lovers the hands-on experience of making the cheese they then get to eat. From brie to burrata, (and some non-cheese classes like wild sourdough, chocolate dipping and instant pot), students can expect an atmosphere full of laughter while demystifying the ancient art of cheese-making. And dress to make a bit of a mess, suggests owner and instructor Kristi Slotemaker.
“The messier the classroom at the end, the better!” she says.
